I’m looking for some good lunches to make for my husband to bring to work with him. The problem is, the microwave at his job is rarely cleaned and makes his food taste like everything else that’s been cooked in it lately. So I’m looking for things that are good cold.

The other problem? He’s extremely picky. He doesn’t eat fruit, eats very vegetables and doesn’t like sandwiches aside from peanut butter and jelly. I’ve made chicken with rice, and things similar to that which he doesn’t mind eating cold, but I’d like some easier things to make, or just some other ideas!

how about a roll up sandwich. like the pinwheel type appetizers. you can use chicken salad in them since he likes chicken or tuna and crackers, pasta salads.

pizza!!!! it’s good hot or cold and he doesn’t have to worry about it spoiling before lunch!

Wraps
Pita bread with dip
Sushi
Vietnamese cold rolls
Cous cous salad (if you want something else apart from rice)
Cold penne pasta salad (with fetta, olives, basil and sundried tomato – or change to whatever he prefers)

My cold lunch for years consisted of canned tuna/chicken with avocado mashed up in it and some crackers…

If he’s a picky eater, what kind of foods does he like or dislike?

jelly
choc bar
prawn coctail crisp/doritoes
or pasta

How about creamy honey mustard chicken penne salad?

Here’s a simple version:
Cook some chicken fillet/ or whatever left over chicken,
Cook penne pasta,
Melt a little of honey(microwave few seconds) and mix with Dijon mustard, then add to lite sour cream.
Mix the creamy sauce to the pasta while it’s hot so it sucks in all the flavour, and add the chicken.
Chill in the fridge until needed.

An idea hopefully will help. :)
